Building the starter/levain for my workshops! Sinc Building the starter/levain for my workshops! Since I don’t want to wake up in the wee hours, I usually build my levain the day before and just before it reaches its full potential, place it in the fridge. I know my starter and typically it grows about 3x its original height (1:5:5 ratio) So in this case, when it hits 2x, I get it in the fridge. It will continue to mature slowly and would be perfect for making bread the next morning.

It’s a normal process for me even when I’m making bread for home consumption. Sometimes I build a bulk batch of levain and leave it in the fridge so I can grab some and make bread throughout the week.

CINNAMON & RAISIN!!! A mind blowing combination! I CINNAMON & RAISIN!!! A mind blowing combination! I tweaked my base country loaf recipe a bit. Here’s how it went 👇
✴️350g strong bread flour (I did 250 white and 100 whole wheat Expresso)
✴️6g salt
✴️about a tablespoon cinnamon 
✴️270g water 
✴️20g molasses 
✴️80g sourdough levain/starter

✴️about a half cup raisins soaked in boiling water 
✴️more cinnamon to sprinkle 

Mix flour,cinnamon,water,starter,molasses and leave for 1hour. Add salt and knead(slap and fold)for a minute. Perform 2coil folds at 45 minute intervals. Add raisins and sprinkle cinnamon. Ferment for about 2 hours, pre-shape and shape. Refrigerate and bake on the following evening.

I’ve been brewing kombucha for about 3 years now I’ve been brewing kombucha for about 3 years now and here are my guidelines on how to open a bottle of precious booch without wasting much of it and making a total mess 😄.
1️⃣ after the second fermentation, get them in the fridge. This will stop further carbonation and also help calm down the frizz
2️⃣ avoid jerky movements when you pull it from the fridge 
3️⃣ place the bottle on a plate to catch drippings 
4️⃣ release the flip top slowly while applying pressure on the lid
5️⃣ releases the pressure very slowly and gently (take your time)
6️⃣ clear the foam and fruit pulp and now you are ready to pour

Brewing takes a long time and a lot of effort! And I hate to lose my booch when it comes gushing out as you release the lid! Some times I let the second fermentation go too far and end up with more frizz than I intended to have. But these steps have always worked out well 🥂

And I hope I did a good job at sharing my experience and knowledge. And most importantly inspired many to start their sourdough journey! PRE-SHAPING an important step not to be missed! Th PRE-SHAPING an important step not to be missed! This makes the supple, delicate dough manageable which makes shaping a breeze!! 
👩‍🍳Workshop BTS: these are the doughs students mixed, kneaded, coil folded. Due to time constraints, they move on to pre-shaping with a dough I pre-prepped, leaving me to shape these. But we bake all of these the following day! 
🍞Flavors are : plain, 100% wholemeal, multi seeds, olive, potato & rosemary and one seasonal (right now it’s cinnamon & raisin)
