CINNI BUNS using sourdough croissant trimmings 😃 I hate to say this but these tasted better than the actual cinnamon rolls or the croissants themselves 😆 🤦😂 probably cos it's Tuesday!

I kneaded the leftover/trimmings to form a dough wrapped and refrigerated. Took this out after a week let it thaw,rolled with cinnamon sugar, proofed and baked...just in time for brunch☕
I can assure you that these had a healthy doze of good bacteria 🙌

5 minutes to prep 🙌20 minutes to bake🙌
(Makes 6) 
For the filling: 
225g (1 block) cream cheese
1/4 cup thick coconut milk
2 tbsp coconut sugar 
1 small egg
2 scoops Vanilla KETO Collagen + MCT
For the base:
1/2 cup graham cracker crumbs 
2 tbsp. melted butter
To decorate:
1 cup heavy cream (cold)
1 scoop Vanilla KETO Collagen + MCT
½ cup sweetened coconut flakes, toasted
📝Directions:
- Preheat the oven to 160C
- Prepare a 6-hole cupcake tray and place cupcake wrappers in each hole
- Mix biscuit crumb and butter. Drop about 11/2 tbsp of crumb mixture into cupcake wrappers and press lightly to create a firm base
- Process cream cheese, coconut cream, coconut sugar and Vanilla KETO Collagen + MCT until smooth
- Add the egg and pulse until just muxed
- Pour the cheese mixture into the prepared molds and bake for about 15-20 minutes or until just set. Center should still be wobbly
- Leave the baked cheesecakes to cool
- Whip the cream and Vanilla KETO Collagen + MCT to firm peaks 
- Pipe the whipped cream on cooled/chilled cheesecakes and sprinkle with toasted coconut

If you love lemon meringue tarts, then you will absolutely love these. These tick ✔️ all the boxes. Creamy, lemony, biscuity, gooey & carmelly all at the same time...it feels like a party in your mouth 👄💃🙌
I used to make this into a one big cake, but decided the individual cakes look cuter and  practical when serving.

When I first created this recipe in 2019, there wasn't much talk about SD croix and it was pure curiosity that drove me. I was baffled at the amount of attention my blog post received and to this date it's my top performing post. 🙌

I always experiment with a new flour blend or a butter. Remember my T85 croissants? For these I used LandOLakes 82% extra creamy. Didn't see any difference in lamination but tasted great. I'll be testing more butter varieties..stay tuned..

I made this with good quality dark chocolate, full fat grass fed milk, bit of espresso and a pinch of sea salt. No need to add sugar!!! The toasted marshmallows are sweet enough (in case if you were wondering 😆)
We don't celebrate Valentine's day but we'll use that as an excuse to indulge 🤭

📝Facts:
Type "00" flour is the best when it comes to making authentic pizza base. That gives the most extensible, silky dough. But I'm aiming for the flavor and nutrition, so sticking with high extraction bread flour.
I like to retard the dough for at least 48 hours for flavor development.
To add more flavor, I sometimes use a preferment or a beer barm. 
As for the cheese, nothing works better than buffalo mozzarella.
