These are NOT sourdough. RECIPE 👇🏼

I use the same sourdough recipe from the blog and replace sourdough starter with a slurry made using 10 grams of yeast+2 tbsp warm milk + 1/2 tsp sugar. Just mix all that, cover and let it sit for 10 minutes or until it’s bubbly and frothy.

Mix everything except the raisin & currant and knead until a nice elastic dough is developed (8 minutes roughly). Slap and fold the dough a few times until you get a smooth dough. Add the raisin, currant and mix on the lowest speed for 2minutes or until just combined. Cover the dough and leave in a warm place until doubled (45-1 hour). Divide(70g-90g), shape and again leave covered in a warm spot until doubled. Decorate with the cross and bake! Finish off with a sugar syrup glaze.

Check 👉 the third picture for flour types
✏️ 30% white bread flour
✏️ 40% Expresso whole grain @cairnspringmills (interchangeably use Whole grain Fine Ground @fairhavenmill)
✏️30% Trail blazer T85 @cairnspringmills (yecora rojo)
✏️ 75% hydration 
✏️ 28% levain
✏️ 2% salt
Method is similar to all my bread. 
Mix, water, flour & levain ➡️ rest 1 hour
Add salt slap and fold (or knead) 
Perform 3 coil folds at 45 minute intervals
Rest 1 hour
Preshape, rest 30 minutes, shape and refrigerate for 18-24hours
Bake straight from the fridge

Another one of my yeasted bakes🙌🏼 If you haven’t heard of wood apple, it’s a unique fruit native to Sri Lanka and we juice it, jam it, pickle it and what not! I still buy a jar of jam from Sri Lankan groceries once in a while😋 it is so nostalgic♥️

Tip:The dough is an enriched brioche style. Once bulked, roll out, wrap and refrigerate the dough until it’s hardened. This will make it easier to rollout discs and overall handling later.
